Merging the modern aesthetics and amenities with traditional building techniques and architecture, Ottolire is one of the finest places to stay in ‘trulloland’. This is the rural region of Puglia with villages made up of ‘trullo’ - clusters of round, white-washed stone buildings with conical roofs and curvaceous interiors.

Using local craftspeople, the family who own Ottolire spent many years transforming a clutch of trulli into a luxury hotel and spa resort.

You can stroll through the olive groves, vineyards and woodland, sunbathe by the pool and learn to make local specialities with the hotel’s chef. Or hop on a bicycle or in a car to explore the nearby trullo villages, including the Unesco-listed Alberobello. And the millennium-old Locorontondo, with its bell towers and magnificent churches, isn’t to be missed. The sea is just 30 minutes way, too.

Back the hotel, choose from a range of massages available in the spa, or book in for a Turkish bath or a soak in the hot tub. And you can join wellness activities held in a small clearing among the trees, from yoga and pilates to forest meditation. And in warmer months, there’s water aerobics in the pool.

Most of the hotel's 14 guest rooms have been built with traditional methods and materials in the new main building. But to live like a local, book into an original Executive Trullo, with wood-burning fire and private outdoor hot tub. A few rooms can sleep up to four people, and children are welcome.

The decor is simple and elegant, with exposed stone walls and views over the countryside from many rooms.

Puglian cuisine (also known as Apulian) has always been sustainable, heavy on the vegetables, olives and fruits grown in this land of abundance, and the hotel’s restaurant sticks to this tradition.

Breakfast is a lavish spread of cheeses, charcuterie, eggs, pastries and homemade cakes, with gluten-free and lactose-free options available. Take lunch by the pool - pizzas, sandwiches and salads.

At dinner, expect beautiful plates of vegetables from the kitchen garden, seafood from the nearby fishing villages, and creative dishes using local ingredients - all served with quality Puglian extra-virgin olive oil.

Harmoniously rounded as the toponym itself suggests, Locorotondo owes its name to the morphology assumed by the first inhabited centre, built around the year one thousand. Walking through the narrow streets of the historic centre, between panoramic views and ancient churches, it is easy to be enchanted by its fairytale atmosphere.

If you want to venture out into the surroundings, don't forget to stop in the delightful neighboring villages such as the famous Alberobello, capital of the Trulli, but also Martina Franca and Cisternino. In addition, a short distance away are the beautiful beach of Costa Merlata, the nearby reserve of Torre Guaceto and the Castellana Grotto.
