The peculiarity of this technique is in the fishing net, which is called "menaica". In fact, this net catches only the largest anchovies, and these nervous and darting ones get agitated and quickly lose most of their blood.
The fishermen pull the net by hand on the surface and extract the fishes one by one, clean them directly from the entrails and head, and put them in wooden boxes. No refrigerant or ice are used for shore transportation. In fact, the anchovies are immediately processed, first washing them in brine, and then placed in traditional terracotta jars, alternating with layers of salt.
